Baked Berry Oatmeal
INGREDIENTS
- 3 C. Old Fashioned Oats
- 1½ tsp. Baking Soda
- 1/2 tsp. Kosher Salt
- 2 Large Eggs, Lightly Beaten
- 2½ C. Unsweetened Vanilla Almond Milk
- ½ C. Runamok Maple Syrup (We recommend the Rum Barrel Aged or Cinnamon Vanilla Infused)
- 2 tsp. Vanilla Extract, Bourbon Island
- 3 Tbsp. Melted Butter or Coconut Oil
- 3 C. Fresh Berries, Cut into Bite-Sized Pieces
DIRECTIONS
- Grease a 3-quart baking dish and set aside, while you preheat the oven to 350ºF.
- In a large bowl, combine these dry ingredients: old-fashioned oats, baking powder and salt. Transfer half the oat mixture to the baking dish, then layer oats with half of the fresh berries, and then top with the remaining oat mixture.
- In a medium bowl, whisk together remaining ingredients: beaten eggs, almond milk, maple syrup, vanilla, and butter or coconut oil. Stir until ingredients are thoroughly mixed. Pour the mixture evenly over the oats in the baking dish, and use a rubber spatula to get every last bit of the liquid mixture into the baking dish. Sprinkle the remainder of the berries on the top of the dish.
- Bake oatmeal in the oven for 25-35 minutes, or until mixture is “set” and oats are soft.
Serve warm with a splash of milk!

We took your suggestion and made this for breakfast today. Delicious! It will become a staple for our breakfasts. Thanks for a great suggestion. Just finished watching a TV food program and I found this recipe – coincidence?
Ingredients
Apple Mixture:
1 tablespoon unsalted butter
1 apple, peeled and diced
1 tablespoon brown sugar
1teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Oatmeal:
2 cups rolled oats
1/2 cup slivered almonds + a handful more for the top
1/2 cup brown sugar
1/2 teaspoon salt
1 teaspoon baking powder
2 cups whole milk or almond milk
1 large egg
3 tablespoons unsalted butter, melted and slightly cooled
1 teaspoon vanilla extract
1 cup fresh cranberries
Directions
To make the apple mixture: In a small skillet, set over medium heat, melt the butter. Add apples, brown sugar, cinnamon and nutmeg. Cook for 2-3 minutes, or until apples have softened. Set aside.
To make the oatmeal: Pre-heat the oven to 350F. Butter a 8×8-inch baking dish. Set aside.
In a medium bowl, add the oats, slivered almonds, sugar, salt and baking powder. To a measuring cup, whisk together the milk, egg, melted butter and vanilla extract.
To the prepared baking dish, add the apples and the cranberries. Pour the oat mixture on top and then add the milk. Stir slightly and then top with the extra almonds. Transfer to the oven to bake for 35 to 40 minutes, until the edges are set and lightly golden brown. Scoop into bowls and serve.
