Baked Chicken Wings

3 Tbsp extra virgin olive oil

3 cloves fresh garlic, peeled and pressed

2 tsp (or more, to taste) Chile Powder (or other Spice Blend)

1 tsp Garlic Powder

Salt and ground black pepper to taste

10-12 chicken wings

Preheat the oven to 375 degrees F. While the oven heats up, put the olive oil, fresh garlic, chile powder or other seasoning, garlic powder, salt, and pepper in a large, resealable (Ziploc) bag or plastic container with a tight-sealing lid; seal and shake so that ingredients are fully combined.

Open the bag or container and add the chicken wings to the marinade; reseal and shake vigorously to thoroughly coat the chicken pieces. Using tongs so your hands don’t get messy, arrange the chicken wings on a well-oiled baking sheet.

Bake the wings in the oven for about 1 hour, or until cooked through. (To be certain of doneness, use a meat thermometer; poultry is fully cooked at an internal temperature of 185F).

Remove baking sheet from oven and transfer baked wings to a serving plate. Serve with a side of BBQ sauce or other dipping sauce, if desired.

This recipe is easily doubled-tripled for making large batches of wings to share with friends!

Variations: This is just a very basic recipe for wings — if you’re feeling creative, jazz them up with your favorite spice blend or rub. If you prefer using sauce to flavor your wings, coat the chicken in the olive oil-salt-pepper mixture, and bake for 30 min before adding the sauce (baking too long in a hot oven will make the sugar in the sauce burn).
