2 Cups flour
1/4 tsp baking soda
1-1/2 tsp baking powder
1 Tbsp sugar
1/2 tsp kosher salt
2 egg yolks
1-3/4 Cup buttermilk
6 Tbsp (yes, Tbsp) melted butter
2 egg whites
Preheat waffle-maker. Sift together the flour, baking soda, baking powder, sugar, and salt so that these dry ingredients are thoroughly mixed together.
Separate the egg yolks and whites, and beat the yolks in a medium bowl until they are light. Add the buttermilk and melted butter to the yolks, and whisk together. Add the liquid to the dry ingredients, mixing until just combined.
Whisk the egg whites, at high speed, until they are stiff, but not dry, then use a spatula to carefully fold them into the buttermilk batter.
Take a scoop of batter (will vary depending on your particular waffle iron’s instructions, but ours takes about 1/3 – 1/2 Cup of batter), pour onto heated waffle iron. Close top of waffle maker and cook several minutes, until waffle is golden brown. Remove from waffle iron, and serve with butter and syrup, or your favorite topping.
Omit the sugar if you will be topping the waffles with savory foods.
