Caprese Bread


1-1/4 Cup all-purpose flour
1 Cup of bread flour
2 tsp baking powder
1/2 tsp baking soda
1-1/4 tsp Salt
3-1/2 — 4 oz of cubed, fresh mozzarella cheese
2 Tbsp chopped fresh basil (or 3 tsp dried Basil Leaf)
1/3 Cup chopped sun-dried tomatoes ( not packed)
2 eggs
2-1/2 Tbsp Olive Oil (Garlic Olive Oil works great here)
1-1/4 Cups buttermilk

Preheat the oven to 350F and grease an 8×4 inch (bread) loaf pan.

Meanwhile, in a large mixing bowl, combine the dry ingredients: flour, baking powder, baking soda and salt. Mix well. Add the basil, mozzarella and sun-dried tomatoes to the dry ingredients, and stir to combine.

In a separate bowl, whisk together the eggs, olive oil and buttermilk.  Pour the liquid mix into the flour mixture and mix by hand with a wooden spoon, until all the ingredients are incorporated. (This dough will be like batter, thick and sticky.)

Transfer the dough into the prepared loaf pan and spread it evenly. Bake in the 350 oven for 40-45 min, or until a toothpick, inserted in the center of the loaf, comes out clean.
