Chia Rice Salad

INGREDIENTS

3 Cups cooked brown rice
2 Tbsp olive oil
2 Tbsp lemon juice
3 cloves garlic
1/2 tsp sea salt
1/2 tsp rosemary
1/2 tsp oregano
1/8 tsp cayenne pepper
1/2 cup Chia Seeds
1 small zucchini, thinly sliced
1 tomato, chopped
2 Tbsp Parmsesan cheese, or substitute your favorite grated cheese

STEPS

Prepare brown rice, and transfer to a large salad bowl. In a small jar with a lid, combine the olive oil, chia seeds, lemon juice, garlic, salt, and herbs, shaking well to combine.

Pour herb dressing over rice and lightly toss to coat. Cover salad bowl and allow to cool. Add the vegetables and sprinkle on cheese (if using) or alternative cheese. Toss again to distribute vegetables throughout the salad, and serve.

*Omit Parmesan to make this salad a vegan dish
