Chocolate Chip Buttermilk Cake


3/4 Cup Extra Virgin Olive Oil
1-3/4 Cups granulated sugar
1 Cup buttermilk
2 tsp Vanilla Extract
4 large eggs
2 Cups all-purpose flour
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 Cup mini chocolate chips

Cocoa Dusting:
1 Cup powdered sugar
1 Tbsp unsweetened cocoa powder


Preheat oven to 350 degrees F. Coat one 9×13- inch pan with olive oil cooking spray

In a mixer bowl combine olive oil, sugar, buttermilk, vanilla, and eggs. Blend on medium speed for 1-2 minutes.

Add flour, baking powder, baking soda, and salt. Mix until all ingredients are well blended. Using a wooden spoon or spatula, gently fold in chocolate chips.

Pour batter into prepared pan. Bake 40-45 minutes or until a knife inserted into the center comes out clean.

Cocoa Dusting:
In a small bowl, combine powdered sugar and cocoa powder. Mix until the two are completely blended. Use a shaker, sifter or a fine strainer to dust the top of the cooled cake with the sugar/cocoa blend.
