Chocolate Chip Cookies with Walnut Oil (Dairy Free!)
INGREDIENTS
3/4 cup Roasted Walnut Oil
2 eggs
1 tsp Vanilla Extract
3/4 cup brown sugar
3/4 cup sugar
2 1/4 cup flour
1 tsp baking soda
1 tsp salt
12 oz chocolate chips
STEPS
Preheat oven to 350 degrees.
In a mixing bowl, combine Roasted Walnut Oil, eggs, vanilla, brown sugar, and sugar. Blend until well-combined and creamy.
Blend in flour, baking soda, salt, and chocolate chips.
Drop large spoonfuls on cookie sheet and bake at 350 degrees for 10-12 minutes.
Yields: Approximately 5 dozen cookies
These cookies are so good, you won’t believe there’s no butter! Crunchy-moist, there’s just a hint of walnut oil to surprise you.

I am excited to try this recipe for my GF LF (gluten free/lactose free) daughter – but will need to revise it so it is gluten free as well. Just a note: chocolate chips are NOT dairy free/lactose free so you would want to substitute some special chips in order for this recipe to be okay for our LF friends. 🙂

you can try carob chips and I have been buying grain sweetened semi sweet chocolate chips by Sunspire, that are quite good… no dairy..

In NZ you can get dark chocolate chips that are dairy free, although you have to check the ingredients because some brands do still contain dairy. Frustrating. Otherwise you could buy a dairy free dark chocolate bar and chop it briefly in the food processor.

Hi Patty, The Roasted Almond Oil should work the same as the Roasted Walnut Oil, it’ll just have a slightly different flavor (but should still be delicious!). Let us know how it turns out! – Andy
