1-1/2 Cups all-purpose flour
1/3 Cup unsweetened Dutch Process cocoa powder
3 tsp Apple Pie Spice
1 tsp baking powder
1/2 tsp salt
4 Tbsp unsalted butter, melted
1 Cup sugar
1/4 Cup unsweetened applesauce
1/4 Cup molasses
2 cookie sheets, lined with parchment paper
Set baking racks in the upper and lower thirds of the oven, and preheat to 350 degrees.
Sift the dry ingredients together into a mixing bowl and set aside.
In another mixing bowl, beat the butter and sugar together until smooth. Add the applesauce and molasses to the butter-sugar combination. Stir in dry ingredients, a little at a time, and mix until fully combined.
Using a tablespoon, drop spoonfuls of the dough, an inch apart, on the prepared baking sheets. Bake cookies for about 10 minutes, rotating pans after about five minutes. Avoid over-baking.
Remove cookies to a cooling rack, and allow to cool at least 15 min before serving.
