Classic Banana Bread


2 to 3 very ripe bananas, peeled
1/3 Cup melted butter, cooled slightly
1 tsp baking soda
Pinch of salt
3/4 Cup sugar
1 tsp Korinjte Cinnamon
1/2 tsp Cloves, Ground
1/2 tsp Nutmeg, Ground
1 large egg, beaten
1 tsp vanilla extract
1 1/2 Cups of all-purpose flour


Preheat oven to 350°F and prepare (grease / flour) a 4″ x 8″ loaf pan.

Using a fork, potato masher, or electric mixer, mash bananas until they are mostly smooth. (A few lumps wont hurt anyone!)

In a large mixing bowl, slightly beat the egg. Add mashed bananas, melted butter, baking soda, salt, sugar, spices, and vanilla. Add the flour, a little at a time, and stir until just incorporated.

Pour banana bread batter into prepared baking pan and bake for 50-60 minutes. Banana bread is ready when a toothpick or tester, inserted into the middle of the loaf, comes out clean.

Remove banana bread from oven and allow to cool, in the pan, for a few minutes. Remove the bread from the pan and allow to cool completely on a wire rack.

Serve immediately, or store in an airtight container up to one week (can be frozen for several months).
