3 Cups rolled oats (not quick oats)
1 Cup slivered almonds
1 Cup cashews
3/4 Cup shredded coconut (sweetened or unsweetened)
2 Tbsp Sweet Caramel Seasoning
2 Tbsp Wheat Germ (OR 2 Tbsp Flaxseed Meal)
1/4 Cup plus 2 Tbsp dark brown sugar
1/4 Cup plus 2 Tbsp maple syrup
1/4 Cup Olive Oil
3/4 tsp salt
1 cup small dried fruit: raisins, chopped dates, dried cranberries, blueberries or cherries, or a combination
Preheat oven to 250F.
In a large bowl, combine the oats, wheat germ, nuts, coconut, and brown sugar. Stir with a big spoon until well combined. Sprinkle mixture with Sweet Caramel Seasoning.
In a separate, smaller bowl, combine maple syrup, olive oil, and salt. Whisk to blend. Pour liquid mixture over dry ingredients, and toss gently to coat. Pour sticky granola mixture onto 2 baking sheets. Bake for 1 hour and 15 min, stirring every 15 minutes to allow granola to toast and brown evenly.
Remove baking sheets to cooling racks and allow granola to cool for at least 30 min. Transfer cooled cereal to a large bowl. Add dried fruits, and toss until evenly ingredients are evenly distributed throughout.
Good with yogurt or milk for breakfast, or use as a crunchy topping for cobblers or ice cream desserts!
