1 grilled or roasted chicken breast, diced
1 stalk celery, diced
1/2 red apple, diced
1/4 Cup toasted pecans, chopped
1/4 Cup raisins or currants
1/4 red onion, diced
1/3 Cup Mayonnaise (may need more as salad “sets”)
1/2 tsp Curry Powder (Mild, Madras or Hot!)
1/8 tsp Cayenne pepper
Salt to taste.
STEPS – It’s as easy as tossing the ingredients together in a bowl, folding to blend, chilling the salad well and enjoying on your favorite bread or atop salad greens.
