Curried Vegetable Dip
INGREDIENTS
1/2 cup sour cream
1/4 cup mayonnaise (low fat or regular both work well)
3 oz cream cheese at room temperature
1 tsp fresh lemon juice, or to taste
1 tsp Curry Powder
1/2 tsp Ground Cumin
1/2 tsp Salt
1/4 tsp Turmeric
1/3 cup finely chopped celery
1/3 cup finely chopped peeled and seeded cucumber
1 scallion, trimmed and finely chopped
Garnish: scallion greens, sliced diagonally
STEPS
- Whisk together until well-combined all ingredients except celery, cucumber, and scallion.
- Stir in vegetables.
- There is no Step 3.
It is as simple as that!
Enjoy with fresh veggies or crackers.

I like to use 0% plain greek yogurt in place of sour cream. A good way to cut calories but preserve taste and add some additional fiber.
