Diane’s Zucchini Bread

AllSpice staffer Diane shared one of her favorite ideas for homemade holiday giving. She says: “Bread is a gift I enjoying baking, as well as, giving. And, here is my favorite.”


3 Eggs
2-1/4 Cups Sugar
1-1/2 Cups of Olive Oil
3 tsp Vanilla Paste
3 Cups of Flour (1/2 Whole Wheat)
1 tsp Salt
1 tsp Baking Soda
1/4 tsp Baking Powder
3 tsp of Saigon Cinnamon
2 Cups Minced Zucchini
1 Cup Chopped Nuts (Optional)


Beat eggs thoroughly, beat in sugar. Add oil slowly and beat well. Add vanilla. Sift flour into a separate bowl and measure; then sift again with the dry ingredients.

Add flour to egg mixture. Add minced zucchini and chopped nuts (if using). Bake in two large or three small greased loaf pans at 350 degrees for 45 minutes.

Can also be baked in a greased Bundt pan; change baking time & temp to 325 degrees for 70 to 75 minutes.

Cool zucchini bread for 20-25 minutes before removing from pan.

This bread freezes well.
