Early Spring Green Salad


1 Tbsp Raspberry Balsamic
2 Tbsp Roasted Almond Oil
1 package baby salad greens (spring mix)
1/4 Cup dried cranberries
8 oz cherry or grape tomatoes, halved
1 crisp apple (such as Gala), cored, sliced and diced
4 oz crumbly goat cheese such as Feta

Salt and Pepper to taste


In a small bowl or cruet, whisk together the Raspberry Balsamic Vinegar and Roasted Almond Oil. Set aside.

Put the salad greens into a serving bowl, along with the dried cranberries, halved little tomatoes, and diced apple. Toss to combine. Sprinkle salad with goat cheese, then add the Raspberry-Almond dressing. Toss again to coat. Adjust seasonings as needed.

Serve immediately.
