Fried Green Tomatoes
INGREDIENTS
3 medium-sized, firm green tomatoes
½ Cup all-purpose flour
1 tsp Red Pepper Flakes
¼ Cup milk
2 beaten eggs
2/3 Cup fine dry bread crumbs or cornmeal
¼ Cup Olive Oil, such as Leccino Extra Virgin Olive Oil
½ tsp Salt
¼ tsp Pepper
STEPS
Slice tomatoes into ½ inch rounds.
Season with salt, pepper and pepper flakes
Place the flour, milk, eggs, and breadcrumbs into three separate shallow containers.
Heat 4 Tbsp of olive oil in a skillet over medium-high heat.
Dip tomatoes in milk, then flour, then eggs, then breadcrumbs.
Fry one-half of the coated slices for about 5 to 7 minutes on each side, browning nicely. Repeat with second-half of the coated slices, adding olive oil as needed and being careful not to overcrowd the pan.
