1 Cup Guinness (or other dark beer)
1/2 Cup chilled butter, cubed
2 Cups sugar
3/4 Cup Cocoa Powder
2 eggs, beaten
2/3 Cup sour cream
3 tsp Vanilla Extract or Vanilla Paste
2 Cups all-purpose flour
1-1/2 tsp baking soda
Preheat oven to 350F. Liberally grease a 9-in springform pan and line the bottom with parchment paper; set aside.
In a small saucepan, heat beer and butter until butter is melted. Remove from the heat; whisk in sugar and cocoa until well-incorporated. In another bowl, combine the eggs, sour cream and vanilla; now whisk these into the beer mixture. Combine the dry ingredients (flour and baking soda); add to the beer batter and stir until it is smooth. Pour cake batter into prepared pan.
Bake cake at 350° for 45-50 min, or until a toothpick inserted near the center of the cake comes out clean. Remove cake from oven and allow to cool completely, still in the pan, on a wire rack. Carefully remove the sides of the springform pan.
Make the frosting while the cake cools. Transfer the cake from the pan to a platter or cake stand, and frost the top and sides of the cake so that it resembles the texture of a frothy pint of beer. Yum.
For a finishing garnish, we recommend a sprinkle of Smoked Bacon Salt.
There probably won’t be any, but if there are leftovers, they should be covered and refrigerated.
