Frosted Olive Oil Brownies with Vanilla Salt

1/4 Cup Olive Oil (One of our favorites is Blood Orange Olive Oil)
1 Cup sugar
1 tsp Vanilla Extract or Vanilla Paste
2 large eggs
1/4 tsp baking powder
1/4 Cup cocoa powder (try AllSpice’s new organic cocoa, Dutch process style!)
1/4 tsp salt
1/2 Cup flour
Top it all off:
Chocolate Frosting (Your favorite recipe or ready-made brand)
Vanilla Salt


Preheat oven to 350°F.  In a large mixing bowl, combine olive oil and sugar, whisking to blend.  Add eggs, one at a time, followed by the vanilla paste or extract, mixing thoroughly after each addition.

In a separate bowl, combine all the dry ingredients (cocoa, salt, flour).   Stir the dry ingredients into the liquid ones, a little at a time, stirring after each addition to fully incorporate.   Pour batter into a 9 x 9 greased baking pan, and bake 20-25 minutes.

Remove brownie pan from oven. Allow to cool completely and frost generously with the chocolate frosting. Sprinkle with the Vanilla Salt just before serving.
