Glazed Grilled Chicken

This recipe took second place at our 2014 Iowa State Fair Chicken Rub Contest!


one-6-8 lb roasting chicken, halved
1/2 Cup vegetable oil
For Rub:
2 Tbsp granulated sugar
2 tsp Smoked Hot Paprika
1 tsp Garlic Powder
1 1/2 tsp Rosemary, Whole
2 tsp Kosher Salt
2 tsp Chili Powder
1 Tbsp lime juice

For Glaze:
1/4 Cup vegetable oil
1/4 Cup honey
2 tsp Chili Powder
1 Tbsp lime juice


Combine all rub ingredients with the vegetable oil to form a paste. Rub under and over skin of chicken. Cover and refrigerate overnight.

Grill over indirect medium-high heat. Brush with Honey Chili Glaze and allow to rest 20 minutes before serving.
