enough for 4 main portions
1 tsp grated lime zest
1/4 Cup fresh lime juice
3 Tbsp Extra-Virgin Olive Oil (Persian Lime Olive Oil works well here)
2 Tbsp low-sodium soy sauce
4 Tbsp Chili-Lime Seasoning
1 tsp sugar
1 Tbsp fresh cilantro, minced
1-1/2 lbs medium shrimp in the shell, cleaned (shelled) and rinsed
In a medium bowl, stir together the lime zest, lime juice, olive oil, soy sauce, cilantro, sugar, and Chili-Lime Seasoning.
Pat cleaned and rinsed shrimp dry with a paper towel and then transfer shrimp and lime-spice mixture in a large resealable bag. Shake bag contents to evenly coat the shrimp, then chill at least 20 min (up to 1 hour) in the refrigerator.
Preheat the grill on medium-high heat. Quickly grill the shrimp until just cooked through, about 2 min per side, and serve immediately. This recipe pairs wonderfully with couscous or rice, and with grilled vegetables and chilled fruits.
