Healthy Snack Mix


1/3 – 1/2 Cup sugar
1 Tbsp Vanilla Sugar
1/4 tsp Salt
1/4 tsp Ground Coriander
1/2 tsp Ground Cinnamon
1/4 tsp Ground Nutmeg
1/4 tsp Ground Allspice
1/8 tsp Black Pepper
4 Cups mixed nuts – walnut halves and/or whole almonds are especially tasty
2 Tbsp Blood Orange Olive Oil
1 Tbsp Vanilla Extract


Mix the first 8 ingredients (sugars and spices) in a small bowl.
In a larger bowl, combine the nuts, olive oil, and vanilla.
Add sugar mixture to nut-olive oil-vanilla mixture, and toss to coat.
Spread coated nuts on a foil-lined cookie sheet (at least 15″ X 10″ X 1″)
Bake at 300 degrees for 30 min, stirring every 10 min. Remove from oven. Let snack mix cool completely, and store in airtight container.
