Herbes de Provence Crackers


2 1/2 cups all-purpose flour
3 tsp Herbes de Provence
1 tsp salt
4 Tbsp Extra Virgin Olive Oil
3/4 cup cold water


Preheat oven to 400 degrees.

Combine dry ingredients in food processor and pulse until well combined.  Add oil and 1/3 cup cold water to dry mixture, process until mixed thoroughly (about 10 seconds).   Repeat with remaining water, being careful to not over-process.

Mold 1/4 of the prepared dough into a ball and roll on parchment paper or silicone baking mat until almost as big as a cookie sheet.

Cut rolled dough into squares, sized as desired and poke each square twice with a fork.

Bake until golden brown, about 15 minutes. Repeat with remaining dough.
