1/2 Cup brown mustard seeds
1/4 cup yellow mustard seeds
1 cup dark beer
1 1/4 cups champagne white wine vinegar
1 Cup mustard powder
1 Cup water
2 Tbs sugar
2 tsp salt
1 tsp ground allspice
1/2 tsp ground turmeric
1/2 tsp mace
Making your own gourmet mustards can be fun and rewarding! Experiment with the combinations – they’re endless, delicious, aromatic, and flavorful. These make great gifts which are very inexpensive to make.
- In a glass container, combine mustard seeds with beer and champagne vinegar. Let sit 48 hours with liquid covering seeds.
- Combine the mustard powder with 1 cup water, and let sit 20 minutes.
- Add seeds/liquid, mustard powder/water mixture, and combine with the remaining ingredients in a food processor. Process until seeds become creamy, 4-6 minutes.
- Store in an airtight container in the refrigerator for at least 1 week before using to let the flavors develop. Keeps up to 1 month.
