Homemade Thin Mints
INGREDIENTS
4 oz dark chocolate candy coating or melt-aways
1/4 tsp Peppermint Extract
storebought vanilla wafers (roughly 20-25)
STEPS
Place the chocolate candy coating and peppermint extract in a microwave-safe bowl. Warm mixture in a microwave, uncovered, on high power for 30-60 seconds, or until the chocolate pieces are melted and smooth. Pause the microwave to stir the mixture every 15 seconds. (Don’t have a microwave? You can also melt the chocolate, combined with the peppermint extract, in a double boiler over medium-low heat).
Using a dipping tool (like this) or some other simple utensil that will keep your fingers clean and chocolate-free, dip each vanilla wafer in the chocolate mint coating; allow excess coating to drip off. Place each dipped cookie on a baking sheet that has been lined with waxed paper; allow the cookies to cool until chocolate coating has set. Serve immediately, and/or store unused cookies in an airtight container, in a cool dry place.
We love to chill these cookies by putting the wax-paper-lined sheet in the fridge or freezer for a few minutes! YUM.
