Island Jerk Pulled Chicken


1-1/2 lbs boneless and skinless chicken
1/2 Cup diced canned tomatoes
1 Cup chicken broth
1 bell pepper, diced
1 onion, diced
2 garlic cloves, minced
1 jalapeño, minced (Optional)
Juice of 1 lime
1/2 Cup fresh cilantro, coarsely chopped
3 Tbsp Island Jerk Seasoning


Assemble all of the ingredients in the crockery insert of your slow cooker. Stir to coat chicken and combine flavors. Secure lid on slow cooker, and set on highest setting for 3 hours, or cook on low heat for 6 hours.

When the chicken is cooked through, remove pieces from slow cooker to a large plate. Pull apart / shred poultry with two forks, then return to slow cooker and mix into the sauce. Allow chicken sit for 10 minutes, covered, to absorb more of the spicy cooking liquid.

Serve jerk chicken over rice, or in a lettuce wrap.
