Mango Cucumber Gazpacho

This recipe comes to us courtesy of AllSpice customer RuthAnn McGuire Cherny.

3 mangoes, peeled and diced
1 seeded cucumber, coarsely chopped
1/4 Cup olive oil (RuthAnn recommends Hojiblanca Olive Oil)
1 tsp sugar
Salt and Pepper to taste

Combine ingredients in blender or food processor, and pulse until mixture is desired level of smoothness/chunkiness. Add 1/2 — 1 Cup of water to achieve desired consistency.

Says RuthAnn: “And that’s it! Tastes better when refrigerated several hours.”
