Mango Pickle Fresh Chutney


1/4 Cup Traditional White Balsamic Vinegar
1 1/2 tsp sugar
1/2 tsp salt
1/4 tsp Ground Fenugreek
1/8 tsp Ground Cardamom
1/4 tsp Ground Coriander
1/4 tsp Grains of Paradise, ground
2 tsp New Mexican Red Chile Flakes
1/2 tsp lemon zest
1 Tbsp lime juice
1/4 tsp ginger juice
1 mango


Place the vinegar in a bowl. Place the sugar and salt in a mortar. Add the fenugreek, cardamom, coriander, grains of paradise, red chile flakes and grind together. Add spice mixture to the vinegar. Add zest, lime juice, and ginger juice.

Peel the mango, pit and grate or slice the fruit very thinly. Combine all together in a bowl, and let marinate for 2 hours.

Should make about 1 1/2 cups.
