2 lbs extra-lean ground beef
2 Cups Hen of the Woods Mushrooms (rehydrated and finely chopped)
2 Cups kale, finely chopped
1/2 Cup onion, finely chopped
1 Tbsp garlic, finely minced
1 Cup whole wheat bread crumbs
2 large egg whites
2 Tbsp Homestyle Meatloaf Seasoning
Heat oven to 400°F. Combine all ingredients in a large bowl, mixing together with a wooden spoon (or your clean bare hands) until thoroughly combined.
Divide beef mixture evenly and mound into 12 “balls,” placing one in each cup of a muffin pan. Bake for 20 minutes, or until beef mixture is cooked through. Remove pan from oven. Allow to cool for 5-10 minutes before removing individual meatloaves from the pan, draining any excess oil on a paper towel.
