Mom’s Meatloaf

This recipe recreates the meatloaf our mom made when we were kids — but adds a contemporary, zesty punch in the form of AllSpice Homestyle Meatloaf Seasoning.


2 Tbsp Olive Oil
3 yellow onions, chopped
1/3 Cup chicken or beef broth
1 Tbsp Tomato Paste
2 tsp Kosher Salt
1 tsp Ground Black Pepper
2 Tbsp Homestyle Meatloaf Seasoning
3 Tbsp Colonel Pabst Worcestershire Sauce
2-1/2 lbs (80%) lean ground beef
1 Cup Old-fashioned Oats
2 eggs, beaten


Preheat the oven to 325°F. Heat the olive oil in a medium skillet over medium heat. Saute the chopped onions, stirring intermittently, until onions are soft and translucent, about 10 min. Remove skillet from heat, and add the Worcestershire sauce, stock, and tomato paste, whisking to combine.  Allow onion mixture to cool slightly before next step.

Using a sturdy wooden spoon or your clean bare hands, combine the ground beef with the onion mixture, dry oats and beaten eggs, in a mixing bowl, until ingredients are roughly combined.  Pat the ground beef mixture gently into a rectangular loaf pan that has been lined with parchment paper. Top the meatloaf with a “frosting layer” of ketchup.

Bake in the oven for 1 to 1-1/4 hours. Meatloaf is done when an instant-read thermometer registers 160°F when inserted into the middle of the loaf.

Remove from oven and allow to cool for five minutes before removing meatloaf from pan.

Serve immediately — but remember that any meatloaf that is leftover will make a fantastic sandwich, too!
