Mint & Honey Lemonade


2 Cups lemon juice
1-1/2 Cups sugar
1/2 Cup Granulated Honey
6 Cups water
1/4 Cup Peppermint, Crushed


Put the crushed peppermint leaf in a tea bag or strainer, and steep the herb in just-boiled water for 5 minutes. Strain the peppermint (or remove the tea bag/ball) from the water, transferring the peppermint-infused liquid in a new pot. (Discard or compost the mint).

Add the sugar and granulated honey to the peppermint liquid, and allow the sweeteners to dissolve in the hot water. (Put pot back on to boil if the liquid has cooled too much to dissolve the sugar and granulated honey). Add the lemon juice and stir to combine.

Allow beverage to cool slightly before pouring into ice-filled glasses. Enjoy!

Garnish beverages with thin lemon slices and a sprig of fresh mint if desired.
