Orange Blossom Scented Almond Cookies

1 cup unsalted butter, softened
3/4 cup sugar
1 tsp Almond Extract
1 tablespoon Orange Blossom Water
2 cups flour
1/2 tsp baking powder
1/4 tsp Sea Salt, Fine
1/2 cup toasted almonds

1/2 cup powdered sugar
1/2 tsp Almond Extract
1 tsp Orange Blossom Water
3 tsp water


Preheat oven to 400 degrees Fahrenheit.

Using a stand mixer, cream together butter, sugar, Almond Extract, and Orange Blossom Water. In a separate bowl, combine flour, baking powder, and salt.

Beat the flour mixture into the butter mixture in small quantities – just a few tablespoons at a time – and let combine completely before adding more, until fully combined.

Roll into one inch balls of dough and place on a parchment paper-lined baking sheet. Flatten slightly (we used a measuring cup).

Bake on the middle rack for 7 minutes. Allow to cool on the cookie sheet.  As the cookies cool, top with a few lightly toasted almonds. Once mostly cooled, drizzle with icing.

To make the icing:
Combine all ingredients in a small mixing bowl. Stir with a spoon until combined. Use quickly, before the icing begins to set.
