Paleo Poppy Seed Muffins

INGREDIENTS
1 1/4 almond flour
2 Tbsp coconut flour
1 Tbsp Poppy Seeds
1 tsp baking soda
1 tsp baking powder
1/4 tsp Kosher Salt
1/4 Cup honey
1/4 Cup lemon juice
zest of 1 lemon
3 eggs, whisked
3 Tbsp coconut oil
1 tsp Vanilla Extract, Mexican

STEPS
Preheat oven to 350 degrees.
In a small bowl, mix all the wet ingredients together. In a medium bowl, combine all the dry ingredients.
Add wet mixture to dry and stir to combine. Let batter rest for 5 minutes and stir again.
Grease a muffin pan (or use liners) and fill 2/3 full.
Bake 15-20 minutes, or until toothpick comes out clean.
