Peach and Balsamic Sorbet

8 Cups peaches, peeled, pitted and roughly chopped
1/4 Cup Traditional Balsamic (Choose a fruity infused balsamic like Blueberry or Blackberry Ginger for something really amazing.)
1/2 Cup granulated sugar

Prepare an ice cream maker according to the manufacturer’s instructions.

Puree chopped peaches with the sugar and vinegar in a food processor or blender until mixture is completely smooth.

Transfer mixture into the prepared ice cream maker and freeze according to manufacturer’s instructions. (Ice cream prepared in a 1-1/2 quart Cuisinart ice cream maker takes about 25-30 minutes to reach “soft serve” stage). When sorbet is ready, scoop it into an airtight container and freeze at least one hour. Sorbet will keep, frozen, for up to 1 month.
