Peach & Basil Vinaigrette

1/3 Cup Peach White Balsamic Vinegar
1 garlic clove, peeled and minced
2 Tbsp brown sugar
1/4 tsp freshly Ground Black Pepper
1/8 tsp Salt
2 Tbsp Basil Olive Oil
1 large peach, pitted and finely chopped
1-1/2 Tbsp chopped fresh basil


In a small bowl, combine Peach balsamic, minced garlic, brown sugar, black pepper and salt, whisking together until sugar is dissolved. Whisk in olive oil, stirring quickly. Add the finely-chopped peach and fresh basil. Serve immediately.

(If made ahead, whisk all but the last two ingredients to re-combine oil and vinegar. Wait to add the fresh fruit and basil immediately before serving. )

Try this vinaigrette on a salad of mixed greens, crumbled goat cheese and pecans…mmm!
