Persian Lime Grilled Veggies
INGREDIENTS
Assorted veggies (zuchini, onion, mushroom, bell peppers, cherry tomatoes, eggplant, etc.)
Persian Lime Olive Oil
Salt & Pepper to taste
Skewers
STEPS
Soak wooden skewers in a shallow dish of water for at least 20 minutes before beginning to assemble the recipe. (This will keep them from splintering or catching on fire – yikes).
Cut assorted veggies into large pieces. Chunks should be large enough so that they won’t fall thru the grill grates.
Vegetables, assemble! Thread vegetable pieces onto soaked skewers.
Brush skewers liberally with Persian Lime Olive Oil before seasoning with Salt & Pepper.
Grill and enjoy!
You can also make this over your stovetop!
