Plantain Pesto

INGREDIENTS
2 Cups washed plantain leaves
3 cloves garlic
1/4 Cup pine nuts
1/4 Cup Parmesan cheese
1/2 Cup Basil Olive Oil
STEPS
Throw everything in the food processor and give it a spin, until you reach a smooth consistency. Add more olive oil if a more liquid texture is needed, or more cheese if a thicker sauce is preferred.
Serve this as a sauce over pasta, as a spread, or a dip. Plantain is considered a weed and grows all summer long, and can be harvested from anywhere that has not been sprayed with pesticides or weed killers. Spinach can be used in place of plantain.
