Prelude to the Turkey Snack Mix
This recipe won third place in our 2017 Iowa State Fair Savory Snack Mix Contest.
INGREDIENTS
8 C. Dry Cereal (Use Your Favorite)
1 C. Shelled Pecans
1 C. Dried Cranberries
⅓ C. Corn Syrup
½ C. (1 Stick) Butter
½ C. Packed Brown Sugar
½ tsp. Baking Soda
1 Tbsp. Herbed Poultry Seasoning Blend
1 tsp. Sage, Dalmatian Leaf
½ tsp. Fleur de Sel
2 Tbsp. Neapolitan Herb Balsamic Vinegar
DIRECTIONS
- In a large roasting pan, toss to combine the cereal, pecans and cranberries. Set aside.
- Mix together the syrup, butter, and sugar in a medium saucepan on the stove. Stir constantly over medium heat and bring to full boil. As soon as sugar mixture boils, add the baking soda, remove pan from heat and stir to incorporate. Add spices and balsamic vinegar and stir.
- Pour the mixture over the cereal in the roasting pan, and toss to coat thoroughly. Bake snack mix in oven at 250°F for one hour, stirring every 15 minutes.
- Remove roasting pan from oven. Allow snack mix to cool before serving. Store leftover cooled snack mix in an air tight container.
