Safari Pizza With Harissa
INGREDIENTS
1 baked pizza crust (pre-baked pizza crust such as Boboli brand)
2 tsp Berbere Spice Blend
1 tsp garlic (minced)
1/4 tsp salt
2 Tbsp Harissa Olive Oil
1 chinese eggplant (sliced thick)
1 zucchini (sliced thick)
1 red onion (sliced thick)
2 Tbsp Harissa Olive Oil
1 chorizo sausage (sliced)
6 oz mozzarella cheese (sliced)
STEPS
Mix Berbere Spice Blend, garlic and salt with olive oil. Coat top of pizza crust with oil mixture; set aside.
Prepare topping:
- Place vegetables in a roasting pan; lightly toss with Harissa Olive Oil to coat.
- Roast vegetables for 15-20 minutes.
- Remove from oven and let cool.
- Arrange cheese, sausage and vegetables on pizza crust.
- Bake in preheated oven at 350°F for 10 minutes.
- Remove from oven and serve hot.
Drizzle with more Harissa Olive Oil if desired.
