Salmon Cakes

5 oz canned salmon
1/2 tsp Garlic, Minced
1/3 Cup sweet potato, mashed
4 Tbsp coconut flour
1/2 tsp Paprika, Smoked Sweet
1/2 tsp Sea Salt, Coarse
1/4 tsp Black Pepper, Fine
1/4 tsp Curry Powder, Mild
1/2 tsp Rosemary, Powder
2 eggs
1 Tbsp Butter Olive Oil

Place salmon in a large bowl and mash. Mix in mashed sweet potato.
Add coconut flour 1 Tbsp at a time. Mix in spices and herbs. Add eggs one at a time. Mix until thoroughly combined and thick enough to form balls. You may need to add more coconut flour.
Roll into 5-6 balls. Place on parchment paper and press down into cakes.
Heat a skillet on medium high heat and add 1/2 Tbsp Butter Olive Oil. Once heated, add cakes to pan. You may need to work in batches. Cook 3-4 minutes each side, or until cooked.
