Southern-Style Vegetables


2 slices bacon, chopped
1 onion, coarsely chopped
1 – 10 oz package, chopped frozen okra
1 – 14 oz can diced tomatoes, drained
1 – 16 oz package frozen corn
1 Tbsp File Powder
sea salt
ground black pepper


In a large, heavy cast iron skillet, brown the chopped bacon on the stove, over medium-high heat. When bacon is mostly cooked (about 10 min?), add diced onion and chopped okra and continue to cook, stirring continuously with a heavy wooden spoon or spatula.

When bacon is fully cooked and onion is browned and translucent, add diced tomatoes. Bring to a boil, then reduce heat to medium, and simmer for about 20 min. Add frozen corn, return to a simmer, and cook another 10 minutes.

Add File Powder and season to taste with salt and pepper just before serving.
