Strawberry Rhubarb Balsamic Jam

8 oz fresh or frozen strawberries
8 oz diced rhubarb
4 – 6 Tbsp sugar, depending on how sweet you want your jam Jam Spread on Shortbread
2+ Tbsp Vanilla Balsamic Vinegar (Strawberry, Dark Chocolate, or Traditional balsamic vinegars would also work well)

In a medium sauce pan, combine all of your ingredients. Bring to a boil.

Reduce heat to a simmer and allow mixture to cook for 25-30 minutes, or until mixture has thickened into a jam.

Transfer to an air-tight jar and store in the refrigerator.
