Sugar Cookies with Olive Oil

This recipe took first place at our “Olive Oil Cookie” Contest at the 2015 Iowa State Fair


1 Cup Manzanillo Olive Oil (or other mild flavored olive oil)
1 egg
2 3/4 Cup all purpose flour
1/2 tsp baking powder
1 1/2 Cup white granulated sugar
1 tsp vanilla extract or paste
1 tsp baking soda


Preheat oven to 375 degrees. Stir together flour, soda & baking powder. Set aside. Cream together olive oil & sugar until smooth. Beat in egg and vanilla. Gradually add in dry ingredients

Refrigerate for 1 hour. On a well-floured surface, roll the dough out to 1/8 inch thick and cut into desired shapes.

Place on parchment to bake. Cook 8 to 10 minutes in preheated 375 degree oven. Frost & enjoy.
