Thai Spiced Peanuts


4 Cups unsalted peanuts (or other unsalted mixed nuts)
4 Tbsp unsalted butter
3 tsp Thai Rub
3 Tbsp brown sugar

Preheat oven to 400 degrees. Spread nuts on a large baking sheet and bake in oven until lightly toasted, about 8-10 minutes.

Meanwhile, melt the butter in a small saucepan over low heat. Add remaining ingredients, stirring to combine.

Transfer toasted nuts to a large serving bowl. Pour butter mixture and toss lightly to evenly coat nuts with buttery spices. Can be served just-out-of-the-oven, or can be cooled first.
