If you’re wondering what to do with the leftover Thanksgiving turkey and cranberry relish, here’s an unconventional (but really delicious) simple idea:
Sprinkle a layer of shredded Swiss cheese on one of the tortillas. Add a layer of turkey, and sprinkle a little more Swiss cheese on top. Drop the chutney on top of the cheese in spoonfuls, trying to spread the chunky chutney as evenly as possible. Top with remaining cheese and another tortilla.
Heat butter olive oil in a skillet over medium heat. Once the pan is hot, add quesadilla. Fry until tortilla is golden, and carefully flip. Once both sides of the quesadilla are golden and the Swiss cheese is melted, use a spatula to remove it from the pan, transferring it to a cutting board.
Cut quesadilla into wedges and serve with additional Cranberry-Pear Chutney.
