Tomato-Orange Soup


2-1/2 Cups tomato juice
1/2 Cup freshly-squeezed orange juice
2 Cups peeled, diced tomatoes
2 Tbsp Extra Virgin Olive Oil
1/4 Cup loosely-packed, shredded basil, stems removed
1 tsp peeled, minced fresh ginger
1/4 tsp Ground Cinnamon

Plain yogurt or sour cream – optional

Combine all the ingredients into a blender or food processor with a >6 Cup capacity.* Blend until uniformly mixed.


Serve with a dollop of sour cream or yogurt, if desired.

*Is your blender capacity too small to make the soup all in one container? Blend the diced tomatoes, basil, cinnamon, and ginger with 1 Cup of the tomato juice, then pour the mixture into the tureen or serving bowl with the olive oil and remaining tomato and orange juices. Whisk for a moment to combine.

Makes about 6 Cups, or 4-6 servings
