AllSpice staffer Val shared one of her favorite holiday treats, easy spiced nuts that “bake” in a slow cooker. She explains: “I bought a crock pot this year on Black Friday and I am convinced that I now have to use it for every single meal! It also makes my house smell wonderful.”
In a small bowl, mix together white and brown sugars, ground cinnamon, and salt.
In a mixing bowl and using an electric mixer, beat together the egg white and vanilla until just before soft peaks form. Stir almonds (or other nuts) into mixture and toss gently until nuts are well-coated.
Butter (or spray liberally with non-stick vegetable oil spray) the slow-cooker’s crock. Add nuts to the crockpot and set to “bake” on low.
Set yourself a timer, and stir the nut mixture every 20 minutes over the next 2 hours.
After two hours have elapsed, pour the water over the nut mixture and stir so that all the nuts are moistened — this will ultimately (and surprisingly) make the cinnamon nuts more crunchy.
Cook another hour, stirring once after 30 min.
Remove the spiced nuts from the slow cooker, and spread them on a large platter or cutting board (or baking sheet) so they can cool and dry. Allow to cool completely before storing in a sealed container.
