1-1/2 tsp Wasabi Powder
2 cucumbers, peeled, seeded and thinly sliced
2 Tbsp rice wine vinegar
2 tsp sugar
1 tsp Roasted Sesame Oil
1 tsp salt and ground black pepper (to taste)
2 scallions, thinly sliced
1 Tbsp Black Sesame Seeds
Combine the wasabi powder with 1/2 tsp warm water in a small bowl. Allow to stand for 5 min for flavors to fully develop. Add the rice vinegar and sugar to the wasabi paste; whisk until fully combined. Whisk in the sesame oil, the salt and ground pepper. Set aside.
Pour dressing over the sliced cucumbers, scallions and sesame seeds. Toss gently to combine.
Serve immediately, or cover and refrigerate for up to several hours before serving chilled.
