1 store-bought rotisserie chicken or 6 cooked chicken breasts, skin and bones removed and roughly diced
1 Cup red grapes, halved
1 Cup celery, diced fine
1/2 Cup golden raisins
1/2 Cup cashews, chopped
1 Cup Greek yogurt
2 tsp lemon juice
2 Tbsp Garam Masala Blend
1 tsp Turmeric
1/2 tsp Ginger Powder
Pinch Cayenne Powder (optional)
In a large bowl, combine yogurt, lemon juice, garam masala and other spices until smooth to make the dressing.
Add chicken, fruit, and nuts to the bowl. Using a spatula or big wooden spoon, toss ingredients together, combining ingredients and thoroughly coating the fruit, chicken and nuts with the yogurt curry dressing.
Serve a scoop of chicken salad on a bed of romaine (or even iceberg) lettuce, or as a sandwich filling on croissants or your favorite bread.
