2-3 Granny Smith apples, thinly sliced
Small wedge aged Gouda, peeled in curls with a vegetable peeler
1 bag spring mix salad greens (5 – 8 oz)
Handful smoked almonds, finely chopped
1/4 Cup Apricot White Balsamic Vinegar
1/4 Cup Roasted Almond or Walnut Oil
salt and pepper to taste
Shake vinegar & oil together in a tightly sealed container. Combine the rest of the ingredients in a large serving bowl. Gently toss salad mixture with the vinaigrette to coat, serve and enjoy!
