Spicy Thymes – Chris’s Comfort Food

The leaves are starting to fall, there’s a chill in the air, and pumpkin spice is everywhere – you know that means?

It’s time to whip up some hearty comfort food.

AllSpicer Chris had just that idea when he recently made Mom’s Midwest-Style Beef Stroganoff over chow mein noodles. He said, “This dish is one of my oldest food memories, and is the epitome of comfort food in my family. I remember my mother making this when I was young. She would let me open the cans of Cream of Mushroom soup at first. As I got older, she would let me dredge the meat, and eventually let me brown the meat in the skillet. It was a very exciting experience for young me.”

Chris is a very creative chef, always finding a way to put his own touch on a dish. Starting with his mom’s base recipe, he seasoned this meal with Porcini Mushroom Salt, Worcestershire Powder and Pabst Worcestershire sauce. He opted for fresh Portobello mushrooms and Campbell’s cream of mushroom soup.

Chris admits he normally uses store brand soup, but Rory convinced him to go name brand. “It made all of the difference,” Chris said. “Something about their product is not present in generic brands.” Chris finished his dish with a dash of every Midwesterner’s ‘secret spice’ – Italian Seasoning Blend.

Overall, I was sad I wasn’t invited.

Next Time…
Chris says he avoided the canned mushrooms due to their appearance. “…I thought [they] looked disgusting.” However, he missed the classic texture and taste of his mom’s dish. Close your eyes and power through Chris, you know that makes the food taste amazing.
