The AllSpice collection of curries expanded by one this week with the addition of our new Vadouvan Curry Blend. This French-influenced curry originated in the 17th century in the Puducherry region in southern India, which was governed as a French colony into the 1950s.
The blend combines familiar curry flavors of mustard seed, fenugreek, cumin, coriander, cardamom, and chiles with garlic, onion, and shallots (the French influence). It’s delicately flavored, and is a bit sweeter than traditional curries, yet still packs a bit of heat. It’s perfectly suited for use with chicken and vegetables, but bold enough to stand up to the richer flavors of lamb, goat, and dairy.
Use the Vadouvan Curry Blend in any recipe which calls for curry powder. Try it with chicken, winter vegetables, and a bit of yogurt to create a rich curry dish to serve with rice. Feeling bold? Replace the chicken with lamb and enjoy. Tweak a plain sauce, vinaigrette, or chicken salad recipe by adding a dash of the spice blend. Even try it as a popcorn topper for something outside the norm.
